This is probably the best noodle soup I’ve ever had. Well, the best tasting broth. I’ve had this PHO in Savannakhet in Laos. If you are in Laos, you will definitely have to try the noodle soup!
The soup is clear and full of flavor. The mouthwatering soup is made from beef bones which simmer for a long time over a charcoal stoked stove. Yes, they cook everything on a charcoal stove.
The soup is filled with rice noodles, tender beef, thinly sliced beef, beef meatballs and some fresh herbs. On the side, you get a big load of fresh herbs, bean sprouts and lettuce.
Add fresh lime, chilies, chili paste, sugar and fish sauce to taste. I only add lime, chili paste and chilies, because I like my soup a bit sour and a lot spicy.
Mix the fresh herbs and spices together and treat yourself. SO. GOOD. And the nice thing is, you will get a free iced tea too!
