This is a recipe for Tom Yam Kung Spaghetti. It’s a fusion and modern twist of a Thai classic. Tom Yam Kung is a traditional Thai soup, which is one of the most popular Thai dishes men have ever known. The dish is a perfect balance of sweetness, saltiness, sourness, and spiciness. The fresh herbs give a face to the dish and the fish sauce gives it the full umami flavor.

Pasta is something Marco Polo brought to Italy, inspired by his trips to China. Kao Pad Tom Yam (Tom Yam stir-fried rice) is a new dish which is becoming increasingly popular in Thailand.

Thai people like food. Thai people love Tom Yum. Italian food like pizza and pasta is gaining popularity in Thailand. Stir-fried rice is something everybody likes. Stir-fried Tom Yum is something new and exciting.

So PASTA TOM YUM KUNG is the next iteration. It’s something you definitely have to try. You will love it. Here’s how to make it:

Ingredients:
For about 4 persons:
– 400g pasta
– 500g shrimp
– 100g cherry tomatoes
– 100g mushrooms
– 2 shallots or half red onion
– Whole chillies (depending on how hot you want)
– 8 Kaffir lime leaves
– 1 tablespoon of chopped galangal
– 1 tablespoon of Lemongrass
– 4 teaspoons of chili paste (or 2 teaspoons of sugar)
– 1 lime
– 1 teaspoon of fish sauce
– Fresh coriander
– 100ml Cooking cream or coconut cream

Directions:
1) Pre-cook the pasta until al dente; about 2 minutes shorter than directions on package
2) Chop all the fresh herbs and vegetables:
– Galangal, lemongrass as thin as you can
– Tear the lime leaves to release more flavor
– Chop the onions
– Mushrooms in half
– Tomatoes in half
– Roughly chop coriander

3) Gently fry the galangal, lemongrass, lime leaves and unions until you can smell the aroma of the herbs
4) Add the chilies paste (or sugar) and stir until you don’t see any lumps (or when sugar is dissolved)
5) Add the mushrooms and stir until all mushrooms are coated with oil
6) Add the whole chilies (you can leave these out, take these out later or just eat them, just as how spicy you like) and stir for about 30 seconds
7) Add the cooking cream and let the sauce reduce until half.
8) Add a little bit of fish sauce for saltiness and umami flavor.
9) Add the shrimp and tomatoes and cook until the shrimp is becoming orange but not yet done
10) Add about the juice of about half a lime.
11) Taste, the dish should be a bit sour, salty, sweet and spicy. Add fish sauce, chili paste/sugar, lime juice or fresh chilies to taste.
10) Stir in the coriander and add the pasta.
11) Put the pasta on the bottom of a plate and place the goodies on top
12) Eat!
